Domaine des Roches Neuves, "Terres Chaudes," Saumur-Champigny, France, Cabernet Franc, 2021

Winemaker Theirry Germain is a transplant to the Loire Valley from Bordeaux and was one of the early converts to biodynamic farming. Famed for thick red and bone dry chenin, we can't get enough of what Theirry is up to.  The Terres Chaudes is soulful and finessed.  Long persistent finish with notes of blackberries and licorice and fine tannins.  This is a wine of contemplation.  Enjoy with roasted rabbit or Bolognese.
